The perfect dinner to surprise your loved ones

Do you know what to cook for dinner? Looking for a fast, easy to make, and a tasty dish is not always easy.

My challenge was even harder, as I was planning to surprise my whole family with a delicious dinner. The pressure was real, but only until the first bite :).

Since this dish was highly appreciated by all the family members, I decided to share the recipe with you. Now you can prepare it yourself to surprise your loved ones.

So, here’s what you need.

INGREDIENTS:

  • 2 carp fillets (use more if you are cooking for more people — I used 4 trout fillets for 6 people)
  • 1 lemon
  • 10 cherry tomatoes
  • 3 medium red onions
  • 4 garlic cloves
  • 4 carrots
  • 4 parsley roots
  • 10 g fresh parsley leaves
  • 200 ml dry white wine
  • approximately 30 ml olive oil
  • salt and freshly grounded pepper (I used a combination of black, white, and red)

PREPARATION:

  1. With the rack in the middle position, preheat the oven 210 C degrees (425 F).
  2. Slice the onions, carrots, parsley roots, garlic, and lemon; and grind the parsley leaves.
  3. Make a few creases on the fish’s skin and put the garlic slices into the creases.
  4. Take a higher tray and put some oil in it (not too much, just enough to cover the tray with a thin layer). After that, spread the onion slices, the parsley root slices, and the carrots slices (the onion should cover the tray and then it should follow a layer of carrots and one layer or parsley roots). Add some salt and pepper on the vegetables (not too much though).
  5. Add some salt and pepper on both sides of the fish. Under each fish fillets place 2 slices of lemon (I placed them under so the taste goes in the fish and to avoid burning the lemon — it would make the fish bitter). Place the fish into the tray and if you like, add a few lemon slices on top (but keep an eye on it because if it burns, it will make the fish bitter — as I mentioned before), add the cherry tomatoes, and the grind parsley leafs.
  6. Add a little bit of olive oil on the fish and pour the white wine on top of everything.
  7. Put the tray in the oven approximately 60–80 minutes. Check it often and when you are satisfied with the reduction of the sauce and the way the fish looks like, it’s ready to be served. As a side dish, I chose to make some potatoes in butter with parsley leaves.

TIP: Keep some of the good white wine and drink it during the dinner! You will understand why…
