Spring Pasta

Pasta with asparagus, broccoli, and zucchini

When I think of spring, I imagine something green, natural, healthy. My Spring Pasta recipe is inspired by the freshness of this season and it’s very easy to make and very healthy.

You need the following ingredients:

  • 500 g of asparagus
  • 500 g of broccoli
  • One medium zucchini
  • 5 pieces of garlic (or more if you like it)
  • 750 g cream
  • 3 tablespoon olive oil
  • Parmesan or cheddar cheese
  • Pasta
  • Salt and pepper

How to prepare it:

  1. Wash the vegetables and remove the end part of the asparagus.
  2. Cut the vegetables in medium pieces and slice the garlic. Put some water with salt to boil.
  3. When the water is boiling, add the broccoli pieces and boil them for exactly 5 minutes. Then, take out the broccoli with a spoon and add the asparagus in the water for exactly 3 minutes.

Tips: put the boiled vegetables in water with ice to maintain their fresh green color.

4. After removing all the vegetables from the water, add the pasta in the same water. This way, the pasta will take some of the vegetables’ taste.

5. Put the olive oil in a pan and add the garlic for 3 minutes. Add the zucchini and cook it for 5 minutes, or until it’s getting softer.

6. Add the broccoli and the asparagus and cook it until it’s getting a bit of color on the outside.

7. Add some salt, pepper, and the cream and let it boil for 10 minutes.

9. Grate some parmesan or cheddar cheese.

10. Serve the pasta with the sauce and some cheese on top.

I always get more active in the spring, doing more sports, eating healthier and being more focused on my lifestyle. Therefore, I try to keep my diet as healthy as possible and to cook more meals based on vegetables rather than on meat.
